This sandwich is a loaded beast of veggies that will surely even capture the heart of non-veggie lovers. Get your taste-buds and napkins ready, this is the big one!
What you will need:
ORGANIC and FRESH:
- 1 small/med Zuccini
- 1 med Red Pepper
- 1 small Red Onion
- 2 med Tomatoes
- 1/4 cup diced Kalamata Olives
- 3/4 cup Arugula
- 1 Baguette
PACKAGED:
- 4 jarred (halved) Artichoke Hearts
- Part skim Rocatta Cheese (or aoili sauce)
Kitchen Staples:
- Garlic Powder to taste
- Salt to taste
- Pepper to taste
- Grape Seed Oil
- Extra Virgin Olive Oil
- Balsamic Vinegar
Thoroughly wash vegetables/dry. In a small bowl toss balsamic vinaigrette with arugula. Set aside. Slice zucchini, pepper, Onion, and tomatoes. Chop kalamata olives.
In a large bowl toss cut vegetables (zucchini, pepper, Onion,and tomatoes) with grape-seed oil, salt, pepper and garlic powder, to taste. Grill cut vegetables (zucchini, pepper, Onion,and tomatoes) until tender (approximately 10 min.). Cut baguette in half and grill until toasted (approximately 1 min.).
Preppairing sandwich: spread Rocatta Cheese (or aoili sauce) on both sides of sandwich. Add zucchini, pepper, Onion, tomatoes, arugula, artichoke Hearts, and Kalamata olives.
Enjoy sandwich face open or traditional style. Don't forget extra napkins and someone to share it with!
