Summer Veggie Skewers, a summertime favorite!
Things you will need:
- Red Pepper
- Zucchini
- Button mushrooms
- Washington sweet onions
- Cherry tomatoes
- Balsamic vinaigrette
- Extra virgin olive oil
- Skewers
- Knife, Spoon, Cutting Board
- Bowl
- Barbecue
And here are the steps:
- Rinse/dry vegetables, fruit and mushrooms.
- Slice vegetables in 1/2 inch sections. Place in bowl with uncut mushrooms and cherry tomatoes.
- Pour 3/4 cup of balsamic over sliced vegetables, fruit and mushrooms. Stir.
- Marinate for 5 min; longer if desired.
- Rinse skewer sticks (doing so prevents them from catching on fire from barbecue).
- Add vegetables, fruit, and mushrooms onto each skewer, leaving about an inch of room on each end.
- Place on barbecue. Brush extra virgin olive oil over skewers as they cook
- Barbecue for 5 min on each side, depending on how cooked you preferred your veggies.
