Our mini Veggie Sliders are perfect for breakfast, lunch, dinner, snack-time, or even at parties. Don't be fooled by their little size, they pack some seriously delicious flavor!
Recipe:
- 1 med organic yellow squash; washed and sliced lengthwise into 1/4 strips.
- 1 handful of organic cherry tomatoes; washed and sliced in halves.
- 1/2 sweet onion; peeled and cut into small slices.
- balsamic vinaigrette (to taste).
- Sea salt (to taste).
- 1/2 tsp. grape-seed oil or olive oil
- Mini panini rolls (ours are from Trader Joes)
Method:
- Place sliced vegetables in a long shallow bowl; sprinkle with sea salt and balsamic vinaigrette (to taste); let marinate (5 minutes).
- In med-large skillet, add oil and marinated onion slices, saute on med heat for 3-5 min or until onions are tender; place cooked onions on med plate.
- Repeat number 2 with cherry tomatoes and yellow squash.
- Cut mini veggie sliders in half; in batches of two (depending on how many sliders you want), place in toaster and toast until slightly golden.
- pile on sauteed veggies to your liking (add any desired condiments, although their flavor is big enough, they can be eaten with little to no condiments.).
- You may serve sliders open faced (our favorite!) or traditional.
