This hearty chili dish is chock full of protein. Not only does it taste fantastic, it will defiantly fill you up and it takes less than 30 min to prepare. What you will need:
- 3 Cans stewed tomatoes (Mexican style)
- 2 Cans Organic Garbanzo beans
- 2 Cans Organic Black Beans
- 2 Cans Organic Red Beans
- 1 lb Faux-meat ground (Quorn brand meat ground is a great option)
- 1 Organic onion; diced
Preperation:
- Open cans of stewed tomatoes set aside.
- In a large stockpot, on med. heat, add onions and stewed tomatoes and faux-meat. stirring occasionally.
- Open and thoroughly drain and rinse garbanzo, black, and red beans in a large strainer. Add to stockpot.
- Cook for an additional 15 min and up to an hour depending on how tender you prefer your beans.
- Serve alone or with a touch of sour cream. For a spicier version, add hot pepper flakes, hot sauce or diced jalapenos.
- Chili freezes well.
