If you like your peanut sauce sweet, thick and creamy with a little kick, you will love this recipe! Its perfect as a dipping sauce for spring rolls, tofu, and Mock meats...or you can even use it tossed in with warm cooked noodles for a delicious high protein pasta dish.

Cook time: 10 minutes
Ingredients:
- 1 teaspoon of fresh garlic, minced
- Fresh grated ginger to taste
- 2 teaspoons brown sugar
- 1/4 cup of organic creamy peanut butter (lightly sweetened or unsweetened)
- 1/4 cup water
- 1/4 cup of coconut milk
- 1 tablespoon fresh lime juice
- red chili flakes to taste
- 2 tablespoons soy sauce
Directions:
Combine all of the listed ingredients (with the exception of the water) in a bowl and mix. After all ingredients are completely mixed, add water and mix until completely blended; transfer mixture into a saucepan.
In saucepan, over low to medium heat, stir peanut mixture until the sauce becomes thick (about 10 minutes).
Serve immediately.
