No toddler can resist this lasagna's appealing fun shape! Also when they taste it, they will realize that its yummy too! Good news: There is enough to feed a family of 5.
What you will need:
- Packaged Faux ground meat (A fantastic brand is "Quorn")
- 32 oz. spaghetti sauce (tasty option: 16 oz red spaghetti sauce and 16oz white Alfredo sauce)
- Lasagna noodles
- 3/4 cup water
- 1 tsp. basil (optional)
- 1 tsp. Oregano (optional)
- 24 oz. carton low-fat organic cottage cheese
- 1 egg/beater
- 12 oz. sliced mozzarella cheese or 3 cups
Kitchen Staples:
- Tin foil
- Large skillet
- Small bowl
- Large spoon/spatula
- 13/9 pan
- Cookie cutter with at least a 2 inch horizontal lip (for stamping out shapes from lasagna)
- Oven
Heat oven 350'
- In large skillet stir in frozen faux meat, spaghetti sauce, water, basil and oregano. Heat for 5-10 min, stirring occasionally.
- In small bowl combine cottage cheese and egg.
- In un-greased 13/9 pan, layer 1 layer of uncooked lasagna noodles.
- Evenly layer 1/2 cottage cheese mixture, 1/2 faux meat mixture, and 1/2 mozzarella cheese mixture; repeat once.
- Cover with foil for and bake for 30 min.
- Remove foil, bake additional 25 to 30 min.
- Let stand for 10 to 15 min.
For fun cutout shapes
- Let cool, refrigerate. Let sit 1 hour; remove from refrigerator.
- Use cookie cutter (I used a 2 inch. basic star) to create cutout from cooled lasagna.
- Reheat (oven or microwave)
- Get extra nutrition in your little one by serving their cutout lasagna shape on a bed of green beans or spinach. Add fruit (I used diced peaches).
